Stir Fried Ice Cream

Stir-Fried Thai Rolled Ice Cream Thai rolled ice cream — also known as stir-fried ice cream — is a global phenomenon of ice cream delight. This unique style of ice cream is not pulled from frozen buckets by the scoop, instead its liquid base is poured onto a frozen pan and then chopped, mixed, spread and rolled right in front of you. This frozen dessert originated in Thailand under the name “Thai rolled ice cream” or “stir-fried ice cream”.  A sweetened frozen dessert. It is made using milk, cream and sugars as well as other added ingredients to increase the flavour. The liquid mixture is stirred to incorporate air spaces on an ice pan and simultaneously cooled to -30°C. Once the rolling process is complete, the result is rolls of smooth, semi-solid ice cream or gelato. The rolls are placed in a vertical position in an ice cream cup, topped off with various toppings and decorations, and eaten with a spoon.
